Watch green coffee beans roast over an open flame. Smell frankincense drift through the air. Taste a three‑round jebena coffee – then stay for a live Ital cooking demo using fresh ingredients from the Ital Marketplace. Your mouth will thank you.

The Ceremony & The Feast

Ethiopian Coffee Ceremony (Jebena Buna)

For over a thousand years, the coffee ceremony has been the heartbeat of Ethiopian social life. It’s not just about drinking coffee – it’s about community, patience, and blessing. At our tent, you’ll witness:

  • Washing and roasting green coffee beans in a flat pan until they crackle and darken
  • The aroma of cardamom and clove added to the grind
  • Brewing in a clay jebena with a neck that pours thin, fragrant coffee
  • Three rounds: Abol (strong), Tona (milder), Baraka (blessing)
  • Served with roasted barley or popcorn – the traditional snack

Ceremonies run every hour on the half‑hour. You’re invited to sit, sip, and ask questions.

Ital Cooking Demo – Plant‑Based Livity

Ital food is Rastafari soul food – natural, vegan, and made with love. Our chef will prepare two dishes live, using ingredients sourced from the Ital Marketplace (and you can buy the same ingredients afterward).

  • Chickpea Curry with Coconut Milk – creamy, spiced with turmeric and ginger
  • Steamed Callaloo & Provision – leafy greens with cassava and yam
  • Plus a bonus: house‑made tamarind drink (non‑alcoholic, naturally sweet)

Recipes will be available as printed handouts. Gluten‑free and oil‑free options demonstrated.

Morning Coffee Ceremony

Start your festival day with the first Abol – strong, rich, and grounding. Popcorn served.

10:00 AM – 10:45 AM

Ital Breakfast Demo: Plantain Porridge

Warm, sweet, and creamy – green plantain blended with coconut milk and cinnamon. Taste a cup.

11:00 AM – 11:45 AM

Coffee Ceremony (Second Round: Tona)

Milder, smoother. Learn about the spiritual meaning of each round.

12:00 PM – 12:45 PM

Ital Lunch Demo: Chickpea Curry & Callaloo

Main event. Watch the chef build layers of flavor. Samples for the first 50 attendees.

1:00 PM – 1:45 PM

Coffee Ceremony (Final Round: Baraka – Blessing)

The sweetest, most delicate cup. A blessing is spoken over each guest.

2:00 PM – 3:00 PM

Hands‑On Ital Workshop

Learn to fold a jebena filter, or help grind coffee beans. Limited to 15 people per half‑hour.

3:30 PM – 4:15 PM

Afternoon Coffee & Storytelling

Combine the ceremony with a short story about coffee’s Ethiopian origins – from Kaldi the goat herder to today.

5:00 PM – 6:00 PM

Closing Ital Feast & Final Baraka

Full meal served (while supplies last). Last chance for coffee and community before the evening reasoning circle.

Coconut milk (freshly pressed)

All ingredients are vegan, gluten‑free, and sourced from local Black farmers. The Ital Marketplace is right next door – buy what you taste.
